Today was GREAT for several reasons. One of those reasons is this luscious looking bottle of healthy green juice. A new raw organic juicery has opened up in Old Towne Orange and I’ve been wanting to check it out. So I did. I got the Viva Verde which is only vegetables: kale, spinach, cucumber, celery, parsley and mint. Before today I’ve always loathed the juice of celery, cucumber and parsley (I like them a lot UNjuiced), but this combo was really tasty and mild. Also their glass bottles are adorable. I was a little shocked when I had to pay $9.00 for it, but it was truly worth it. Not something I can afford daily, but I’ll definitely be back!

In the past 4 days I have not eaten “perfectly”. In fact I went running yesterday morning so I could eat cupcakes later (which I did). And I’m realizing that as important as it may be, subscribing to a certain eating “style” should never create a barrier between myself and another human being. It’s not a religion, it’s food. I guess I’m supposed to find a balance somewhere in there. Either way, here’s a picture of water. I’m sure we can all agree that water is nice. In fact, look at this straw. Isn’t it neat? Wouldn’t you say my hydration’s complete? #needsleep

I’ve decided that I will only be posting about my health and nutrition journey through Instagram, and will direct my laptop blogging for a more personal blog. :)

NOTE TO SELF: do not leave a box of these in your car, because later on, a very hungry, post-interview, carb-deficient version of yourself will devour I didn’t even count how many handfuls.

Popsicles for breakfast? Why yes! I made these yesterday = two mangoes and one baby banana in the food processor. That’s it. Serious.

It is nearly 1am and I can’t sleep. I have a big interview tomorrow that will play a major role in next year of my life. I have so much stuff to get done before I leave for Iceland. Add all of that to the fact that I had caffeine this afternoon which 100% disagreed with me even though it tasted amazing and you have this. Me sitting here sipping on a tiny glowing glass mug of soothing hot peppermint tea so I can fall asleep.

Spending some quality time with a bunch of books on teaching, my sketchbook and my journal at my new favorite coffee shop near the beach. Had another 32 ounces of water and a 16 ounce black americano. And in a few minutes I will be eating this cute little meal of Mexican rice and black beans. I love coffee shops that serve food other than pastries! Also, side note: this food combining deal seems to be helping. It’s just hard to get used to keeping my food and liquids separate!

Lunch has been served! (And I already ate it). Roasted cabbage slices. One small head of green cabbage, sliced (obviously), laid flat on a cooking tray, sprinkled with Himalayan sea salt, black pepper, cumin and fresh garlic. The recipe said to use coconut oil but I didn’t use any. The recipe also said to put the oven at 400, but I kept it at 300. Bake for about 20 minutes. It was cruelly really delicious except I put way too much black pepper. My mouth is still on fire. 🌿πŸ”₯

3 luscious mangoes for a late breakfast. Next to watermelon, this is my favorite fruit. 🌴🌴🌴
